Hemp Seed, Black Pepper and Sea Salt Seared Tuna

2 ea 8oz. Tuna Steaks
1/2 T Chopped Garlic in Oil
1T Sea Salt
1T Course Ground Black Pepper
1T Hemp Seeds
1c White Rice (3c cold water)
1T Horseradish (prepared)
1c Ranch Dressing
1T Chopped Scallions

Mix Horseradish and ranch dressing to make the horseradish cream.
Rub the topside of tuna with garlic oil. Sprinkle with sea salt and black pepper, press in hemp seeds.
Sear for 2-3 minutes seed side down in a hot skillet: place plate on top and then a large can of tomatoes or chili (to act as a press)
Turn and cook on the other side for 2-3 minutes. No press needed.
Remove and let stand for 1 minute.
Place cooked rice on a platter and spread slice tuna end to end as thin as possible. Fan out over rice and stripe with Horseradish Cream and sprinkle with chopped scallions.

 
 


Hemp Garden Salad

1 lb Chopped Romaine
1/4 lb Field Greens
1/2 c Chopped Celery
1/4 c Chopped Scallions
1/4 c Chopped Parsley
1/4 c Shredded Carrot
1/4 c Sliced Green Olives
1/8 c Sun-dried Tomatoes
1/8 c Sliced Radish
2 c Croutons
1 c Mozzarella
1/2 c Asiago
1 btl Hemp Oil Vinaigrette
1 oz Mixed Herbs & Seeds
2 c Cherry Tomatoes (cut in half)

Place all ingredients except for dressing and herbs & seeds in a large mixing bowl and mix together. Add vinaigrette and toss well. Portion onto plates and sprinkle with herbs & seeds.

 
 


Grilled Portabella and Hemp Pesto Pizza

1 Pizza Shell (Pan Baked)
2T Hemp Pesto (see below)
1/2 c Grilled and sliced Portobella
1/2 c Mozzarella
1 T Asiago (grated)
1/2 t Oregano

Rub the top of the pizza shell with pesto, arrange mushroom slices and top with cheese and oregano. Bake in 350˚ oven until golden brown and crisp. Remove from oven and let stand for 1 minute. Cut into 1/6 and serve.

 
 


Hemp Parsley Pesto

1bn Parsley
1 c Olive Oil
1 t Salt & Pepper
1 c Hemp Seeds
1 T Chopped Garlic
2 c Grated Asiago

Add Parsley, garlic, and salt & pepper to food processor and chop. Add seeds and chop. Then, add oil and puree. Once it's thin, add cheese a little at a time until desired thickness.


 
 


Grilled Veggie & Hemp Seed Cakes

4 c Grilled Veggies (zucchini, yellow squash, eggplant, asparagus)
1 c Hemp Meal (ground Hemp Seed)
2 ea Egg
1 c Bread Crumbs
1 t Chopped Garlic
1 t Salt & Pepper
1/2 c Shredded Carrot
1/4 c Chopped Scallions
2 T Hemp Oil

Grind grilled veggies in food processor. Dump in mixing bowl and all other ingredients and mix together by hand. Mixture should be wet enough to make balls or patties. If too wet, ad more breadcrumbs. Patties can be skillet fried or oven baked.

Serve on tossed salad or on a sandwich with sun dried tomato ranch.

 
 


Sun-Dried Tomato Ranch

1/2 c Reconstituted dried Tomatoes (pureed)
2 c Ranch Dressing

Mix together in a blender until smooth. Place in a squeeze bottle to stripe with

 
 


Poached Chicken, Cherry Tomato, Spinach and Arugula Pasta Salad

4 ea Poached Chicken Breast (Shredded or Sliced)
1 bx Whole Wheat Penne or Rigatoni
2 pt Cherry Tomatoes
1 lb Spinach
1/2 lb Arugula
1 T Garlic in Oil
1/2 T Salt & Pepper
1 btl Hemp Oil Vinaigrette
1/4 c Olive Oil

Cook and drain pasta and place in a large bowl. Heat olive oil in a skillet. Add garlic and cherry tomatoes and saute for 2 minutes. Add salt & pepper and chicken. Sir together. Add tomatoes and chicken to pasta and mix. Add spinach and arugula to pasta and mix. Add vinaigrette to warm skillet and de-glace. Pour warm dressing over pasta. Toss together and top with grated feta and serve with a spoonful of hemp parsley pesto to stir in just before you eat it.

 
 


Warm Croissant with Bananas, Ice Cream, Caramel, and Hemp Brittle

2 ea Croissants
1 pt Vanilla Ice Cream
1 ea Banana
1 c Carmel Sauce
4 T Hemp Brittle

Heat croissant, cut pocket in it and fill with bananas and ice cream. Place on plate and top with carmel sauce and hemp brittle.

 
 


Hemp Brittle

1 c Sugar
2 T Hemp Seeds
2 T Toasted Almonds

Place sugar in a small, thick sauce pan and place on med-high flame and cook until amber-brown in color. Pour hot caramel out on marble table or sheet pan, spread as thin as possible. Then, dust with hemp seeds and almonds. Allow to cool. Once cool, break into p
ieces.

 
 


Carmel Sauce

1 c Sugar
1/4 c Water
1c Heavy Cream
1/4 lb Butter (Room tempature)

Mix Sugar and water and cook on med-high heat until amber in color. Remove from heat and add cream. Stir in until smooth. Put back on heat if needed. Once smooth, piece in butter and whisk until smooth. Store at room temperature.

 
 


Herbs & Seeds Pizza

1 Pizza Shell
1 T Hemp Oil
1 T Herbs & Seeds
2 T Asiago (grated)
1 T Pizza Cheese

Rub top of pizza shell with hemp oil. Dust with herbs & seeds. Sprinkle with both cheeses and bake in 350˚ oven until golden brown and crisp. Remove from oven and let stand for 1 minute. Cut into 1/6 and serve.
